Gluten free Rustic Pizza Base
Makes 2 pizza bases
120g gram flour (chick pea flour)
Sprinkle of cumin or thyme
Combine the ingredients in a large jug and stir thoroughly as gram flour often has small clumps.
The mixture will resemble a yellow batter. Leave to sit for half an hour.
Heat a splash of olive oil or coconut oil in a non stick frying pan.
Pour about a half of the batter into the centre of the pan, when the oil is hot, and tip the pan gently until the base is covered (as you would for a pancake) .
Allow to brown lightly, turn over and cook the other side.
This base is ready to use in a cob oven or you could leave each one to cool on greaseproof paper to use later.
These bases will last for a few days in an air tight container and can be used in the cob oven when you are ready.
